Eating Healthy on A Road Trip

Ryan and I headed off to Richland, Washington yesterday for Christmas. It was a ten hour drive and I was determined to eat healthy on the way there instead of stopping for junk like I normally do.

Here is what I packed for a healthy road trip.

celery sticks

instant coffee and green tea

chicken sandwiches

cut up dragon fruit

Lots of fruit

Greek Yogurt

Pomegranate Seeds

Bottles of water

Two bags of snacks

Now, we didn’t follow my eating plan to a tee. We did stop for coffee at Timmy’s and got a cheeseburger at Wendy’s in Cranbrook.

But other than those two little slips we ate well and enjoyed a beautiful (but super long) drive through the mountains.

Books, Movies and Artists to Experience in 2012

I wanted to beat everyone on their New Year Resolutions posts! Everyone makes New Year Resolutions and they are always the same; lose weight, eat better, save money, do better at work, travel more. I have stopped setting resolutions as I don’t think you should wait until the beginning of the year to make a positive change. I have a rolling list of things I want to do and accomplish and I remind myself of that often throughout the year.

However, I decided to set a challenge for myself instead of a resolution in 2012. I want to grow my mind. I want to read the classics, watch Oscar winning (or nominated) movies I would never have thought of watching, listen to music I would not normally have listened to. I’ll keep on with the getting healthy and the ‘experiencing life’ goals that I strive to live every day. But I thought this would be a fun experience and I would like to share it with all of you.

Here is the plan:

  • Read one classic book a month (12 total)
  • Watch one classic movie each week (48 total)
  • Listen to one classic album each week (48 total)

Thanks to the local library this should be an easy task to finish and to make it brainless I am listing what I have to read, watch and listen to over the course of this next year. Follow me on this journey as I not only push myself physically through adventures, but mentally as well.

Wishing on a Shooting Star

Last night marked the start of the geminid meteor shower and I was determined to see some shooting stars. According to the news it was slated to start at 10pm soat 10 Ryan and I bundled up (it was about -11 out) and drove to Northern Lethbridge to a park to try to see some shooting stars.

As usual, my camera battery was dead and so I had to rely on my phone for pictures which obviously couldn’t get much.

When we got to the park, we realized that we didn’t know what direction Gemini was in so we had no idea where to look. I texted my sister to Google its direction and when she texted back north-northeast we turned in that direction and BAM! Shooting star! It was beautiful, very bright and literally gone in a flash.  We hung around for another half hour and saw about three total. As we were directly under the spot they were shooting and my car doesn’t have a sunroof, it got very cold very fast.

I am still a happy girl that I got to see a few, and made a few wishes.  Sorry this blog has been so dead lately but I have not been on any fun adventures.  Christmas should be a blast and after Christmas I plan to go cross country skiing and hit up Fernie for some snowboarding so expect some fun posts soon.

NOTE: I DID finally sell my Jeep this week! Yeah! Now that I no longer have double car payments I am going to start saving up for a trip to Hawaii this winter. :)
